Types of Sushi
There are any different ways of preparing sushi and below are the most common. You can get almost any type of filling in most types of sushi, so if you don't see it... just ask!


Bara Sushi
Sushi rice and ingredients mixed together, as a rice salad.
Chirashi Sushi
Sushi rice bed with layers of fish on top. Served in a bowl, also called Iso-don or Gomoku Sushi.
Funamori
Nigiri Sushi wrapped to hold less solid ingredients. Also called Gunkan Maki or Kakomi Sushi.
Futomaki
Large maki roll with multiple ingredients with Nori (seaweed) wrap.
Inari Sushi
Puffy, brown fried tofu stuffed with Sushi rice.
Maki Sushi
Nori (seaweed) and a layer of rice around a core filling. Sometimes referred to as a "roll".
Nigiri Sushi
A slice of fish or other topping on top of vinegared rice.
Okonomi Sushi
Home-style Nigiri Sushi.
Onigiri
Balls made with plain steamed rice with various stuffings.
Oshizushi
Sushi rice and other ingredients pressed into a box or mold.
Sashimi
Sliced or prepared raw fish.
Tazuni Sushi
A roll with diagonal trips of fish across the top, usually maguro, sake, and crab. Also called a Rainbow roll.
Temaki
Cone-shaped Nori (seaweed) rolls filled with vinegared rice and filling. Also called a hand roll.
